  6. Garnish with tomato and serve with ugali while hot

Arrange chicken, skin sides up, on top of onions; sprinkle with paprika. Place the onions, carrots, and fennel in a roasting pan. Spread around the bottom of the roasting pan and place the chicken on top. Put cut celery in cavity, and then salt/peppered all over. Some flour with the oils, then chicken broth and all the browned bits from the pan and juices from carving.
